I have never had any casserole like this. I always want a vegetable casserole that I can whip up using whatever veggies I have available. This healthy mixed vegetable casserole can be a complete meal by itself or a side dish to your favourite protein. The perfect casserole with tons of nutrition! It is an amazing, super healthy meal loaded with veggies that’s excellent for a meatless weeknight dinner. So good, even your pickiest eaters will enjoy this casserole!
INGREDIENTS :
- A little olive oil
- 4 Eggs
- 1 c. chopped carrots
- 1 c. finely chopped onions
- 1 c. chopped zucchini
- 1 c. cauliflower florets
- 1 c. corn
- 1/2 c. green peas
- 2 c. fresh spinach
- 1 c. grated Parmesan cheese
- Salt
- Pepper
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: Cook the finely chopped onions with some olive oil in a large skillet for about 5 to 7 minutes over high heat. To taste, season with salt and pepper.
Step 3: To the skillet, add the zucchini and continue to cook for another 3 to 5 minutes over medium heat. When done, take the skillet off the heat.
Step 4: In a large skillet, steam the vegetables except for the spinach for about 5 to 8 minutes. Season according to taste.
Step 5: Beat 4 eggs in another bowl.
Step 6: Combine everything with the spinach and pour the mixture in an oven-safe casserole dish, then top with Parmesan cheese.
Step 7: Place in the preheated oven and bake the casserole for about 15 to 20 minutes. Remove from the oven when done and serve by itself or as a side dish.
NOTES:
- For this recipe, you can use any vegetables you have available.
- If desired, substitute the Parmesan cheese with any of your preferred cheese. Or simply omit it and just add in some fresh herbs and seasonings.
