This Greek Chicken Bake is another amazing low-carb dinner that you can easily throw together in a snap! Incredibly delicious with Greek flavors that are to die for!
INGREDIENTS
- 2 teaspoons olive oil
- 4 very large boneless, skinless chicken breasts
- 2 teaspoons Greek Seasoning
- 1/2 c. sliced Greek peperoncini
- 1/2 c. chopped or sliced Kalamata olives (or use black olives if you prefer)
- 1/2 c. cherry tomato halves
- fresh-ground black pepper to taste
- 3/4 c. crumbled Feta Cheese (use more or less to taste)
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 375 degrees F or 190 degrees C.
Step 2: Trim and remove the fatty or undesirable parts of four large chicken breasts. Rub both sides of the chicken with Greek seasoning.
Step 3: In a frying pan, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken breasts to the pan and cook for about 2 minutes until the first side is beginning to turn barely brown. Flip and continue to cook the other side for a couple of minutes more.
Step 4: Transfer the chicken to a cutting board when done and allow it to slightly cool.
Step 5: In the meantime, drain the olives and slice. Grab the tomatoes and slice them in half. Then, deseed the peperoncini and slice. Lastly, crumble the Feta.
Step 6: When the chicken breast is cool enough to handle, cut it lengthwise into 3-4 strips.
Step 7: Using a non-stick spray, grease an 8 x 13-inch or 9 x 12-inch casserole dish. Then, arrange the chicken breasts crosswise and sprinkle with tomatoes, olives, and pepperoncini over the chicken strips and crumble Feta. To taste, season with fresh-ground black pepper.
Step 8: Place in the preheated oven and bake for about 25 minutes or until the chicken is hot and the cheese is beginning to melt. The chicken is done once the temperature reached 165 degrees F or 75 degrees C.
Step 9: Remove from the oven when done and serve the Greek chicken bake immediately. Enjoy!
