I love appetizers, and these fried shrimp balls are one of my favourite Chinese appetizers. A popular one that you can easily make at home using simple ingredients. Crunchy and crispy shrimp balls served with Thai sweet chilli sauce or your preferred chilli sauce. These are an amazing Cantonese dim sum perfect for everybody! If you love shrimp and you are looking for another way to enjoy them, this easy-fried shrimp balls recipe is a must-try. Be careful though, these fried shrimp balls are addicting!

INGREDIENTS :

  • 1 egg white, lightly beaten
  • 1 pound (0.4 kg) shelled and deveined shrimp, defrost
  • 8 pieces spring roll wrapper (8” square)
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • 1 tbsp corn starch
  • 3 dashes white pepper powder
  • 1 tbsp oil or some pork fat
  • 1 tsp salt or fish sauce

DIRECTIONS :

Step 1: Add the shrimp, egg white, salt/fish sauce, sugar, corn starch, sesame oil, oil, and white pepper in a mini food processor. Pulse until you have a shrimp paste.

Step 2: Begin to fold the spring roll wrappers up and slice them into tiny strips with a pair of scissors, then into shorter strips. On a flat surface, lay the strips.

Step 3: Shape the shrimp paste into about 1 tbsp balls using your wet hands and roll each ball onto the bed of spring roll strips.

Step 4: Using a pair of scissors, trim the spring roll strips off, ensuring that the strips evenly coat the shrimp ball.

Step 5: Into a deep fryer or wok, deep fry the shrimp balls for about 5 minutes or until golden brown. When done, remove the shrimp balls from the oil and transfer them on paper towels to drain.

Step 6: When done frying all the shrimp balls, serve them immediately with Thai sweet chilli sauce or your preferred chilli sauce. Enjoy!
