This mixed-cheese quiche has an amazing crisp and flaky crust with delicious filling and beautifully melted cheese that has been perfectly set in the custard base. A winner quiche that will surely blow everyone away!
INGREDIENTS :
- 3 large eggs
- 1/2 recipe Easy Pie Dough, rolled out to a 12” circle
- 1 c. whole milk
- 1 tsp kosher salt
- 1 c. heavy cream
- Freshly ground black pepper
- Minced chives, for garnish (optional)
- 8 oz. mixed rindless soft and semi-soft cheeses (such as Gruyere, Fontina, Cheddar, Gorgonzola, Stilton, Jack, etc.), cubed or broken into small clumps
DIRECTIONS :
Step 1: Into an 8-inch tart pan or pie dish, lay the pie dough. Make sure to use a pie dish at least 1 1/2 inches deep. Then, trim the excess dough around the edge. Into the edges, gently press the dough. In an even row across the base and around the wall of the dough, poke holes using a docker or the tines of a fork. Place in the freezer for at least 30 minutes up to overnight.
Step 2: Prepare the oven. Preheat it to 425 degrees F. Make sure to set the oven rack to the middle position.
Step 3: Using parchment paper, line the dough, letting it overhang the sides. With pie weights, dried beans, or dry rice, fill the pan. Place in the preheated oven and bake crust for about 10 minutes. Then, take the weights and parchment paper. Using tin foil, wrap the edges of the pie dough. Continue to bake for an additional 3 to 5 minutes or until the crust is lightly golden brown. When done, take the crust out of the oven, then adjust the oven temperature to 350 degrees F.
Step 4: Beat the cream milk and eggs in a large bowl until well blended. Stir in the salt and pepper.
Step 5: On the bottom of the pie, scatter the cheese and set it on a rimmed baking sheet. Place in the oven and very carefully pour the custard base into the pie. Bake for about 35 minutes or until the middle of the quiche is just barely set but still jiggles when touched.
Step 6: When done, take the quiche out of the oven and let it cool for at least 15 minutes.
Step 7: Serve the quiche warm garnished with some minced chives if desired. Enjoy!
