Easy, delicious, and outstanding! These three words best describe my experience with this dish! Dinner will be awesome again with this Easy Meatloaf and Potatoes! Oh, man, you are so in for a treat! INGREDIENTS :
Meatloaf:
- ⅓ c Romano or Parmesan cheese
- ⅓ c seasoned breadcrumbs
- 1 lb. ground beef, 90/10
- 2-4 tbsp ketchup
- ½ tsp garlic powder
- 1 large Egg
- ¾ tsp Worcestershire sauce
- Warm water (optional- this is only necessary if your mixture feels too dry- start with a little if you need it)
- Cooking spray
- ½ tsp kosher salt
- ¼ tsp ground black pepper
Potatoes:
- 1 c cheddar cheese, shredded
- ¼ tsp garlic powder
- 2 tsp olive oil
- 3-5 medium potatoes, peeled and sliced thin
- ½ tsp kosher salt
- ¼ tsp ground black pepper
DIRECTIONS :
- Prepare the oven and preheat to 200 degrees C or 400 degrees F.
- Apply cooking spray in a 12-cup muffin tin.
- Add all the ingredients for the meatloaf into a large mixing bowl. Use your hands to mix until just blended.
- Fill each muffin cup with the meatloaf mixture, then press each to flatten.
- In a large bowl, add the potato slices, olive oil, garlic powder, salt, and pepper. Toss until well coated.
- Top each muffin tin with 5 slices of potato slices.
- Place them inside the preheated oven and bake for about 20 minutes or until done.
- Remove from the oven, then sprinkle a generous amount of cheese over each muffin.
- Put them back inside the oven and bake for 10 more minutes or until the cheese has melted completely.
- Remove from the oven and allow them to rest for a few minutes at room temperature.
- Serve and enjoy!
