Easy, delicious, and outstanding! These three words best describe my experience with this dish! Dinner will be awesome again with this Easy Meatloaf and Potatoes! Oh, man, you are so in for a treat! Meatloaf:

  • ⅓ c Romano or Parmesan cheese
  • ⅓ c seasoned breadcrumbs
  • 1 lb. ground beef, 90/10
  • 2-4 tbsp ketchup
  • ½ tsp garlic powder
  • 1 large Egg
  • ¾ tsp Worcestershire sauce
  • Warm water (optional- this is only necessary if your mixture feels too dry- start with a little if you need it)
  • Cooking spray
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper

Potatoes:

  • 1 c cheddar cheese, shredded
  • ¼ tsp garlic powder
  • 2 tsp olive oil
  • 3-5 medium potatoes, peeled and sliced thin
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper

DIRECTIONS :

  1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
  2. Apply cooking spray in a 12-cup muffin tin.
  3. Add all the ingredients for the meatloaf into a large mixing bowl. Use your hands to mix until just blended.
  4. Fill each muffin cup with the meatloaf mixture, then press each to flatten.
  5. In a large bowl, add the potato slices, olive oil, garlic powder, salt, and pepper. Toss until well coated.
  6. Top each muffin tin with 5 slices of potato slices.
  7. Place them inside the preheated oven and bake for about 20 minutes or until done.
  8. Remove from the oven, then sprinkle a generous amount of cheese over each muffin.
  9. Put them back inside the oven and bake for 10 more minutes or until the cheese has melted completely.
  10. Remove from the oven and allow them to rest for a few minutes at room temperature.
  11. Serve and enjoy!
