  • 1 tbsp cream milk works fine, as well.
  • 3 tbsp butter
  • 8 oz. baby Bella mushrooms
  • 2 Eggs beaten
  • ½ c red wine or grape juice
  • 4 tbsp saltine crackers or bread crumbs, crushed
  • 1 ½ lb. ground beef
  • 1 small onion chopped fine
  • 4 cloves garlic minced
  • mozzarella cheese optional
  • 1 tsp salt
  • 2 tbsp of dried parsley fresh works best if you have it!
  • 2 sheets puff pastry thaw out according to the pkg
  • salt and pepper, to taste.
  • 1 tsp basil fresh works best if you can

DIRECTIONS :

  1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
  2. In a mixing bowl, add eggs, ground beef, saltine crackers, parsley, cream, and salt. Stir until well blended.
  3. Place a large pan on the stove and turn the heat to medium.
  4. Add butter and allow it to melt.
  5. Add the mushrooms and onion, then sauté until soft.
  6. Add garlic and basil, then sauté until aromatic.
  7. Add the red wine, then stir until well blended. Make sure to scrape the bottom of the pan to get the browned bits.
  8. Turn the heat to high, then simmer for a few minutes until it reduces its volume. Remove the pan from the stove and all it to cool completely.
  9. Apply cooking spray in a baking pan.
  10. Sprinkle flour onto a flat surface, then place the pastry sheets on it. Slice each into quarters.
  11. Top each square with the mushroom mixture and spread it evenly. Sprinkle a generous amount of mozzarella cheese.
  12. Form the meat mixture into patties, then top each square with it.
  13. Fold the corners of the pastry and seal.
  14. Arrange them onto a cookie sheet, then make an “X” shape over each wellington. Brush each with a beaten egg.
  15. Place them inside the preheated oven and bake for about 30 minutes or until done.
  16. Remove from the oven and allow them to rest for a few minutes at room temperature.
  17. Serve warm with gravy. Enjoy!
