INGREDIENTS :
- 6-7 medium Yukon gold potatoes, thinly sliced into 1/8th inch rounds (3 pounds gold potatoes — by weight is a more accurate measure)
- ½ white or yellow onion, cut into slices
For the sauce:
- 2 tbsp salted butter
- ¼ c all-purpose flour (whole wheat, all-purpose, or gluten-free 1:1 flour will all work)
- 1 1/2 c unsweetened almond milk (regular, skim or whole milk will also work)
- 8 oz sharp cheddar cheese (2 heaping cups shredded cheddar cheese)
- ½ tsp garlic powder
- ¾ tsp salt, plus more to taste
- Freshly ground black pepper
For topping:
- 1/2 c Gruyere cheese (or sub more sharp cheddar)
- ¼ c grated parmesan
To garnish:
- Fresh chopped parsley
DIRECTIONS :
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Apply cooking spray in a 2-quart baking dish.
Step 3: Arrange the potatoes in three rows into the prepared baking dish.
Step 4: Fill each gap between the potato rows with the sliced onions.
To Make the Sauce:
Step 1: Place a saucepan on the stove and turn the heat to medium.
Step 2: Add 2 tablespoons of butter and allow it to melt.
Step 3: Add the flour and milk gradually. Whisk every addition.
Step 4: Allow the mixture to simmer. The texture of the sauce should be gravy-like.
Step 5: Reduce the heat to low and add the garlic powder, shredded cheese, salt, and pepper. Stir until well mixed. Make sure to add more seasonings if needed.
Step 6: Spread the sauce on top of the potatoes and onions. Make sure to cover them completely.
Step 7: Cover the entire pan with aluminium foil.
Step 8: Place it inside the preheated oven and bake for about 45 minutes.
Step 9: Remove the foil cover and sprinkle the 1/4 cup of Parmesan cheese and 1/4 cup of gruyere on top.
Step 10: Bake for another 45 minutes or until golden brown.
Step 11: Remove from the oven and sprinkle freshly chopped parsley on top.
Step 12: Serve and enjoy!
