Ingredients:

  • 3-5 lbs. boneless pork chops (thick cut 1-inch- 1 1/2-inch)
  • 1/4 c cornstarch
  • 1/2 c ketchup
  • 1/2 c light brown sugar, packed
  • 1/4 c low sodium soy sauce
  • 1 tsp minced garlic
  • 1-3 tbsp red chilli paste (I used Gourmet Garden)
  • 1 tsp black pepper
  • 1/2 tsp kosher salt

Directions:

  1. Add everything into a 6-quart slow cooker aside from the cornstarch and pork chops. Stir until well blended.
  2. Add the pork chops and stir again until well coated.
  3. Cover the slow cooker, then cook for about 4 hours on a low setting.
  4. Add the slurry, then stir until well blended.
  5. Cover the slow cooker and cook the pork chops for another hour until fork-tender.
  6. Serve hot and enjoy!
