INGREDIENTS :

  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 1/3 c cornstarch
  • 1 lb. chicken thighs, cut into 1-inch chunks
  • 1/2 tsp red pepper flakes
  • 1/2 c canola oil

Sauce:

  • zest of one large lemon
  • 1/2 c water
  • 1 tbsp cornstarch
  • 1/2 c honey
  • 2 tbsp soy sauce
  • 1/2 lemon, juiced

Garnish:

  • sesame seeds
  • lemon zest
  • green onions

DIRECTIONS :

  1. Add the chicken thighs and cornstarch to a resealable bag. Seal and shake the bag until the chicken thighs are well coated with cornstarch.
  2. In a mixing bowl, add all the ingredients for the sauce. Whisk until well blended.
  3. Place a large pan on the stove and turn the heat to medium-high.
  4. Add vegetable oil and allow it to become hot.
  5. Add the chicken, then fry for a few minutes until golden brown.
  6. Transfer the chicken onto a clean plate.
  7. Remove the oil from the pan, leaving only 1 tbsp.
  8. Add the ginger, red pepper flakes, and garlic. Sauté until aromatic.
  9. Put the chicken back into the pan, then toss until well-coated with the delicious sauce.
  10. Add the sauce from the bowl over the chicken, then stir until well mixed.
  11. Simmer everything for about a minute or until the texture of the sauce becomes thick.
  12. Remove from the stove, then sprinkle sesame seeds, lemon zest, and green onions on top to garnish.
  13. Serve with rice. Enjoy!
