INGREDIENTS :

  • 1/4 tsp black pepper
  • Additional bread crumbs
  • Vegetable oil
  • 2 12.5 ounces cans of white premium chunk chicken breast
  • 1/4 tsp onion powder
  • 1/8 tsp dried thyme
  • 1 Egg
  • 1/2 tsp salt
  • 1/4 c plain dried bread crumbs\
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder

DIRECTIONS :

  1. Put the chicken into a colander and allow them to drain for a couple of minutes. Chop them into small cuts.
  2. In a large mixing bowl, add all the spices, chicken pieces, salt, egg, and Dijon mustard. Stir everything until well incorporated.
  3. Add 1/4 cup of breadcrumbs and stir to combine. Form the mixture into 6 chicken patties.
    In a mixing bowl, add the rest of the breadcrumbs.
  4. Add the chicken into the bowl with the breadcrumbs, then toss to coat.
  5. Place a large skillet on the stove and turn the heat to medium-high. Add 1/4-inch oil and allow it to become hot.
  6. Add the chicken fritters into the hot skillet, then cook each side for a few minutes until they turn golden brown. Transfer them onto a clean plate.
  7. Sprinkle freshly chopped parsley on top to garnish.
  8. Serve right away. Enjoy!

Notes:

  • Feel free to use Panko breadcrumbs instead of breadcrumbs.
  • You can use regular mustard instead of Dijon mustard.
  • Feel free to cook these fritters in an air fryer.
  • Leftovers should be kept in the fridge. Reheat them for a few minutes before serving again.
