Chicken:
- 4 large chicken breasts
- 3 c. cheddar cheese, grated
- 2 sleeves Ritz crackers
- 1/2 c. milk
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 teaspoon dried parsley
Sauce:
- 2 tbsp butter
- 1 10-ounces can cream of chicken soup
- 2 tbsp sour cream
DIRECTIONS :
Step 1: Into large pieces, slice the chicken breast.
Step 2: Into a food processor, add the Ritz crackers, and process until ground.
Step 3: In individual pans/bowls, add the cracker crumbs, cheese, and milk. Stir in 1/8 tsp pepper and 1/4 tsp salt until well blended.
Step 4: Into the milk, dredge the chicken, then coat in cheese and crumbs. Shake the excess off.
Step 5: In a parchment-lined baking dish, lay the chicken and sprinkle the dried parsley on top of each piece of chicken. Tent the pan with aluminium foil.
Step 6: Place in a preheated 400 degrees F or 200 degrees C oven and bake for about 35 minutes. Uncover and continue to bake for additional 10 minutes or until the chicken is golden brown.
Step 7: Add the sour cream, butter, and cream of chicken soup to a saucepan. Mix well until blended and simmer over medium-high heat until the mixture is hot.
