This is a very simple cinnamon bread recipe that you can easily and quickly whip up from scratch. Moist bread topped with a delicious cinnamon streusel swirl. I am obsessed!
My mom used to make this cinnamon bread only every Thanksgiving and Christmas. This bread is what she called “occasion only bread”. When she passed the recipe down to me, I break that tradition. I’m sorry mom! I super love this cinnamon quick bread that I have to make over and over again! I especially enjoy this at breakfast with my favourite cup of coffee. This also is great as a tasty dessert.
Making this cinnamon quick bread is insanely easy. All you need are pantry ingredients and a few minutes.
INGREDIENTS :
Bread:
- 2 eggs
- 2 c. flour
- 1 1/2 tsp cinnamon
- 4 tsp baking powder
- 1 1/4 tsp salt
- 1/3 c. vegetable oil
- 1 c. buttermilk
- 2 tsp vanilla extract
- 1 c. sugar
Streusel:
- 2 tbsp butter (softened)
- 1 tsp cinnamon
- 2 tbsp sugar
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees. Using a non-stick spray, grease a 9 x 5-inch baking pan and set it aside.
Step 2: Place the bread ingredients (eggs, flour, cinnamon, baking powder, salt, vegetable oil, buttermilk, vanilla extract, and sugar) in a large bowl. Using an electric mixer, beat the ingredients on medium speed for about 3 minutes. Then, pour the batter into the prepared baking dish.
Step 3: To a small bowl, place the Streusel ingredients (sugar, cinnamon, and softened butter). Mix with a fork until well blended.
Step 4: Over the batter, sprinkle the Streusel and swirl.
Step 5: Place in the preheated oven and bake for about 45 to 55 minutes or until the middle of the loaf is set and a toothpick inserted in the centre comes out clean.
