CHEESY BBQ CHICKEN PIZZA ROLLS

These are the cutest pizza rolls stuffed with tender chunks of chicken, sweet BBQ sauce, chopped red onion, and salty bacon bits! So delicious, pleasing, and always a huge hit!

INGREDIENTS :

  • 3 slices bacon cooked crisp, drained, and finely chopped (optional)
  • 1 lb pizza dough fresh, frozen or refrigerated, thawed
  • 1 ¼ c. part-skim mozzarella cheese shredded, divided
  • 3 tbsp red onion finely chopped
  • 1 c. cooked chicken finely chopped (rotisserie, poached, etc)
  • ¼ tsp crushed red pepper flakes optional
  • 1 tsp vegetable oil for greasing the pan, plus more for oiling the bowl
  • ½ c. BBQ sauce (sweet) plus extra for serving
  • fresh parsley leaves chopped for garnis

DIRECTIONS :

Step 1: Thaw the pizza dough following the package directions. In a well-greased bowl, place the dough, if using refrigerated dough. Cover and set the dough aside for about 1 to 2 hours to let it come to room temperature.

Step 2: Lightly grease a baking pan or a large 9 or 10-inch round skillet. Set aside.

Step 3: Prepare the oven. Preheat it to 400 degrees F.

Step 4: Roll out the pizza dough into an 8 x 10-inch rectangle on a lightly floured clean work surface. Allow the dough to rest for another 5 minutes if it springs back and won’t hold its shape. After 5 minutes, roll the dough again.

Step 5: On the surface of the dough, spread the BBQ sauce, leaving about half an inch border along the edges.

Step 6: Evenly across the dough, sprinkle a cup of mozzarella cheese. Top with chicken followed by the onion, red pepper flakes, and bacon.

Step 7: Roll the dough away from you beginning on the long side into a tight cylinder, slightly tucking or pulling it as you go. To seal, pinch the seams together. Then, cut the dough into 8 equal slices.

Step 8: Into the prepared pan, place the rolls, cut-side down. Place in the preheated oven and bake for about 25 minutes. Remove from the oven and sprinkle over the rest of the mozzarella cheese. Return to the oven and bake for 15 minutes more or until the cheese has melted.

Step 9: Serve the cheesy BBQ chicken pizza rolls right away garnished with some fresh parsley. Enjoy with additional BBQ sauce for dipping.
