This four ingredients bacon-wrapped pork tenderloin is one of the best and most incredible meals you can throw together for your loved ones. It is super easy and quick to make with a beyond superb result!
INGREDIENTS :
- 1 tablespoon olive oil
- 1 pound/500 grams pork tenderloin, at room temperature
- 2 tablespoons honey or maple syrup (honey works better, it’s thicker)
- 8 to 10 slices of streaky bacon, long enough to wrap around the pork 1 1/2 times
- Salt and pepper
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 200 degrees C or 390 degrees F (180 degrees C for fan).
Step 2: On a board, lay the strips of bacon, slightly overlapping the pieces.
Step 3: After seasoning the pork with salt and pepper, tuck the thin end of the fillet under. This way the pork is approximately the same thickness from end to end.
Step 4: In an oven-proof skillet, heat the oil over high heat. Once the oil is hot, add the pork to the skillet and sear both sides until browned. When done, turn the heat off and set the pork aside to cool.
Step 5: At the end of the arranged bacon closest to you, place the pork. Lift the bacon under the pork using a long knife, then roll the pork to wrap it around the fillet and end with the bacon seam-side down.
Step 6: Into the skillet, transfer the bacon-wrapped pork and drizzle, then brush with honey.
Step 7: Place in the preheated oven and bake for about 25 minutes until the internal temperature of the pork reached 65 degrees C or 149 degrees F. At the twenty-minute mark, baste the pork with the pan juices, scouring up a flock of the honey and juices pooled in the pan.
Step 8: Remove from the oven when done and allow the tenderloin to rest for about 5 minutes. Just before serving, baste the tenderloin again. Slice into thick pieces and serve the bacon-wrapped pork tenderloin with the rest of the pan juices. Enjoy!
