My mom loves everything pineapple! She eats them fresh or incorporates them into dishes. Whenever we order pizza, she likes the one with pineapple. For dessert, her number one pick is anything that has pineapple in them. She’s crazy about pineapple! When I introduced her to this bacon pineapple BBQ chicken, she lost her mind! We love how we can throw this delicious dish using only seven ingredients. It is also very quick to make, making this excellent for busy and lazy days.
The chicken breasts are smothered in BBQ sauce and topped with pineapple, bacon, red onions, and Mozzarella cheese. The combination of flavours and colours makes this dish super filling and a beauty! Enjoy a Hawaiian-inspired meal without turning the grill on with this scrumptious chicken meal all year round! Simply pop this in the oven, and thirty minutes dinner is ready!
INGREDIENTS :
- 2 green onions diced
- 4 chicken breasts (skinless, boneless)
- 6 strips bacon cooked and diced
- 1 c. pineapple diced
- 1 c. BBQ sauce
- 1 c. Mozzarella cheese shredded
- ¼ red onion sliced (about ¼ c.) plus extra
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: To a casserole dish, add the chicken breast. Brush the chicken breasts with BBQ sauce using a spoon and top with diced pineapple. Next, add the chopped cooked bacon over the chicken and the sliced red onion. Lastly, cover with shredded mozzarella cheese.
Step 3: Place in the preheated oven and bake for about 25 to 30 minutes, uncovered, until the chicken is no longer pink in the centre and cooked through. If desired, you can broil the chicken in the last 4 minutes of baking time.
Step 4: Remove from the oven when done and top the chicken with little more diced pineapple, sliced red onion, and diced green onions.
Step 5: Serve and enjoy!
