This is an easy and quick bread recipe that you can throw together using only a few simple ingredients. If you are a fan of quick bread, then this one-bowl recipe is for you. INGREDIENTS :
- 1 egg
- 12-14 slices of cooked good quality bacon crumbled
- 2 jalapenos diced (remove seeds for less heat)
- 1 tablespoon baking powder
- 4 ounces cream cheese room temperature
- 1 tablespoon sugar
- 2 c. shredded cheese I use 1 c. Monterey Jack and 1 cup cheddar, I have also done 1/2 Mozzarella and 1/2 cheddar
- 2 scallions sliced thin optional
- 3 c. flour
- 1/4 tsp salt
- 1 tablespoon melted butter
- 1 1/2 c. whole milk
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees. Ready a 9 x 5 or 9 x 6-inch loaf pan. Grease and set aside.
Step 2: Start to cook the bacon until crisp. Then, blot the grease and let the bacon cool. Once cool enough to handle, crumble the bacon and set it aside.
Step 3: Combine the flour with salt, baking powder, and sugar. Set aside.
Step 4: Place the cream cheese, shredded cheese(s), jalapenos, scallions (if used), and bacon in your main bowl. Mix well until just blended.
Step 5: To the cheese mixture, add the flour mixture along with the egg, milk, and melted butter. Mix well until everything is incorporated. Do not overmix.
Step 6: Transfer the batter into the prepared loaf pan and place it in the preheated oven. Bake for about 45 to 50 minutes or until a toothpick inserted in the centre of the bread comes out mostly dry.
