One-pan meals are super awesome! They come together easily and quickly. They are also perfect for busy, even lazy days. This Asian Steak Bites and Potatoes recipe is my new favourite. The beef cubes are perfectly seared with tender potatoes in a simple, yet delicious garlicky butter and soy-based sauce. This is packed with flavours and pairs so well with just about anything!
INGREDIENTS :
- cooking oil
- 1 1/2 tbsp butter (divided)
- 12 ounces beef steak (I use ribeye)
- 16 ounces potatoes (I suggest using Yukon gold potatoes)
- 5 sprigs of fresh thyme
- 1 1/2 tbsp soy sauce
- 1/2 tbsp minced garlic
- chopped parsley (for garnish)
- 1/2 tsp salt (divided)
- black pepper
DIRECTIONS :
Step 1: Into 1-inch thickness, slice the beef. Season with 1/4 tsp salt and black pepper. You can peel the potatoes if desired, then cut them into 3/4 inch thick cubes.
Step 2: Drizzle oil into a heavy-bottomed pan and heat over medium heat. Then, add the potatoes and cook, undisturbed, until the bottom of the potatoes begins to brown. Add the thyme sprigs along with 1/4 tsp salt and black pepper. Stir and continue to cook until just tender. When done, transfer to a plate and set aside.
Step 3: Adjust the heat to medium-high heat. If needed, add more oil to the pan. Now, add the beef cubes and sear for about 45 seconds, undisturbed, or until the beef cubes begin to develop colours. Flip and continue to cook for additional 30 seconds or so. Then, add half tbsp butter and minced garlic. Stir and cook further until the garlic is aromatic.
Step 4: Return the potatoes to the pan. Give everything a quick stir. Decrease the heat, then add 1 tbsp butter to the pan along with 1 1/2 tbsp of soy sauce. Toss to coat and continue to cook until done.
Step 5: To a serving plate, transfer the beef and potatoes when done and garnish with some chopped parsley. Serve right away. Enjoy!
