You’ll love this fantastic Asian dish with perfectly charred salmon that has been broiled with a little bit of honey and soy sauce and served over noodles with mushrooms and snow peas smothered in Sriracha flavoured honey-sesame sauce. It is a restaurant-quality meal that you can easily and quickly make at home.

INGREDIENTS :

Asian noodles:

  • ¼ c. honey
  • 1 tbsp olive oil
  • 10 button mushrooms, sliced, or 1 Portobello mushroom, sliced
  • 1 tbsp sesame seeds
  • ¼ c. soy sauce
  • ¼ c. chicken stock
  • 2 tbsp sesame oil
  • 5 green onions chopped
  • ½ pound pasta preferably Fettuccine (half a pound)
  • 2 c. snow peas end trimmed (about 60 snow peas)
  • 1 tsp Sriracha sauce, substitute with any other hot sauce if you don’t have Sriracha

Asian salmon:

  • 1 lb salmon
  • salt & pepper
  • 2 tbsp cooking oil

DIRECTIONS :

Asian Noodles:

Step 1: In a large frying pan, heat the cooking oil over medium heat. Add the chopped green onions and sesame seeds into the hot oil and saute for about 2 to 3 minutes. Then, add the sliced mushrooms and continue to cook for additional 2 minutes. Take the pan off the heat and stir in the soy sauce, honey, chicken stock, sesame oil, Sriracha.

Step 2: Boil the snow peas in another pan for about 3 to 5 minutes or until tender but still crunchy. Drain when done.

Step 3: Following the package directions, cook the pasta in a large pot with boiling water until al dente. Then, drain when done.

Step 4: To the vegetables and sauce, add the drained snow peas and pasta. Toss and cook further over medium-low heat.

Asian salmon:

Step 5: Preheat the broiler. Meanwhile, sprinkle the salmon on the non-skin side with salt and pepper. To a hot large skillet over high heat, drizzle the oil, then add the salmon, skin-side up. Sear the salmon for about 4 minutes, moving it around to ensure that the oil coats the surface of the fish.

Step 6: Flip the fish after 4 minutes and continue to sear the other side over high heat for about 3 minutes.

Step 7: Combine the honey and soy sauce. Slightly heat it in the microwave or stovetop. This will help soften the honey. Brush the top of the salmon with it, then put the salmon under the broiler for about 3 minutes. Midway through broiling, brush the salmon with a more honey-soy sauce mixture. You want the top of the salmon to be slightly charred.

Step 8: Remove the salmon from the broiler and cover it to keep it warm. This will also help to cook the salmon further it turned out a bit undercooked in the middle.
