INGREDIENTS :
- 2 Eggs
- ½ cup plus 1 tbsp brown sugar, divided
- ½ tsp freshly grated nutmeg
- 1 tsp cinnamon
- 2 apples, peeled, cored, and diced (we used Braeburn)
- 1 tsp apple pie spice
- 1 tbsp plus 2/3 c. granulated sugar, divided
- ½ c. butter (8 tbsp)
- ½ c. walnuts, chopped small
- 1½ tsp vanilla extract
- 1½ c. all-purpose flour
- ¼ tsp baking soda
- 2 tsp baking powder
- ½ c. sour cream
- Butter and flour to prepare a 9×5” loaf pan
Glaze:
- 1 tbsp butter
- ¼ c. brown sugar
- 2 tbsp confectioners’ sugar
- 2 tbsp heavy cream
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees F. Grease and flour a 9 x 5-inch loaf pan, then set aside.
Step 2: Place ½ cup brown sugar, cinnamon, and nutmeg in a small bowl. Mix well until blended and set aside.
Step 3: Place the apples in a medium bowl and toss with 1 tbsp brown sugar, 1 tbsp granulated sugar. Apple pie spice, and walnuts. Set aside.
Step 4: Cream the butter in the bowl of a stand mixer with the paddle attachment. Add 2/3 cup granulated sugar, then beat for about a minute until light and fluffy.
Step 5: Add one egg at a time while the mixer is still running. Scrape the bowl and continue mixing for another minute on medium speed until the mixture is slightly pale.
Step 6: Then, add in the vanilla and whisk to incorporate.
Step 7: Combine the flour, baking powder, and baking soda in a small bowl.
Step 8: Add the flour mixture alternately with the sour cream mixer while the mixer is still running. Whisk until just combined.
Step 9: Into the prepared pan, pour half of the batter, spreading it to the sides of the pan. Then, add half of the apple mixture, patting and poking the apples down the batter. On top, sprinkle half of the sugar mixer. Do the same with the remaining ingredients (the batter, apple mixture, then the sugar mixture).
Step 10: Place the pan on the centre rack of the preheated oven and bake the bread for about 50 to 60 minutes or until a toothpick inserted in the middle of the bread comes out clean.
Step 11: In the meantime, place the brown sugar, butter, and cream in a small saucepan. Mix and bring to a boil. Then, adjust the heat to medium-low and simmer the glaze for about 2 minutes, undisturbed.
Step 12: Take the glaze off the heat, then sift in the powdered sugar while whipping. Allow the glaze to sit for at least 10 minutes.
Step 13: Transfer the bread to a cooling rack when done and let it cool in the pan for about 15 minutes. Then, loosen the sides and flip the bread out of the pan and onto the cooling rack. Over a sheet pan, place the rack.
Step 14: Over the cake, drizzle the glaze and allow it to melt into the warm cake. Serve the cake warm or you can cool it completely first. Enjoy!
