INGREDIENTS :

Italian seasoning (divided)

  • 3-4 thyme sprigs (leaves only)
  • ½ c white wine
  • 1 medium onion diced
  • 3 pounds chicken thighs bone-in, skin-on
  • ½ c heavy cream
  • 2 tbsp butter
  • Salt and pepper
  • 3 garlic cloves chopped
  • 1 tbsp flour for thickening the sauce
  • Salt and pepper to taste
  • 1 c chicken stock
  • 1 tbsp olive oil

DIRECTIONS

  1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
  2. Place a large skillet on the stove and turn the heat to medium-high.
  3. Add 1 tbsp of olive oil and allow it to become hot.
  4. Sprinkle Italian seasoning, salt, and pepper over the chicken thighs, then rub each until well coated.
  5. Add the chicken thighs into the hot skillet and sear each side for 5 minutes or until they turn brown. Move the chicken thighs onto a clean plate.
  6. In the empty skillet, add 2 tbsp of butter and allow it to melt.
  7. Add the onion and sauté for a few minutes until caramelized.
  8. Add the garlic, 1 tsp Italian seasoning, and thyme. Sauté until aromatic.
  9. Add 1 tbsp of flour, then whisk and cook for a minute to remove the raw taste.
  10. Pour in the wine, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.
  11. Add the heavy cream and chicken stock, then stir until well blended. Add salt and pepper to season.
  12. Bring the chicken thighs back into the skillet and spoon the delicious sauce over until well coated.
  13. Transfer the skillet inside the preheated oven and cook for another 35 minutes or until done.
  14. Remove from the oven and garnish with freshly chopped thyme.
  15. Allow the chicken to rest for a few minutes to incorporate all the flavours.
  16. Serve with rice or mashed potatoes. Enjoy!
