ONE-POT SAUSAGE PEPPERS WITH RICE

This recipe has always been a part of my family since I was a little kid. I remember my grandma used to cook this One-Pot Sausage Peppers with Rice all the time! I am so grateful to her for sharing this recipe with me because now, I get to share it with you as well. How awesome is that? This dish is so complete that you won’t be needing anything else! Anyway, I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go! Ingredients:

  • 3 c white rice
  • 8 oz. can of tomato sauce
  • 12 oz. sausage link (I use smoked sausage)
  • 4 large garlic cloves – minced
  • 1 chopped bell pepper (I use a mix of red and green bell peppers)
  • 1 chopped small yellow onion
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 5 c chicken broth
  • 1 tbsp olive oil

Directions:

  1. Put a large skillet on the stove and turn the heat to medium-high. (I used a non-stick skillet for this recipe.)
  2. Add olive oil and allow it to become hot.
  3. Add sausage, then cook until brown and crumbly.
  4. Add the onions and peppers, then sauté until soft.
  5. Add the garlic and sauté until aromatic.
  6. Add the rice, seasonings, tomato sauce, and chicken broth. Stir until well mixed.
  7. Cover the skillet and allow the mixture to boil, then turn the heat down to low.
  8. Simmer the dish for about 25 minutes or until done.
  9. Spoon into serving plates.
  10. Serve immediately and enjoy!
