INGREDIENTS :
- 1 tbsp oil
- 1 1/2 lbs bone-in and skin-on chicken thighs (4-6 thighs)
- salt and pepper to taste
- 1 onion, diced
- 20 cloves garlic, peeled
- 2 tsp fresh thyme, chopped (or 1 tsp dry thyme)
- 2 tbsp flour
- 1 c chicken broth
- 1/2 c asiago cheese (or parmesan), gratesalt and pepper to taste
DIRECTIONS :
- Place a large skillet on the stove and turn the heat to medium-high.
- Add oil and allow it to become hot.
- Season the chicken thighs with salt and pepper.
- Place the chicken thighs into the hot skillet and sear each side for 5 minutes or until brown.
- Remove the chicken thighs from the skillet onto a clean plate.
- In the same skillet, add garlic and onion. Saute until aromatic and translucent.
- Add flour and thyme. Stir and cook for about 1 minute.
- Add broth and scrape the bottom of the skillet to get the brown bits.
- Add the asiago and stir until well mixed. Season with more salt and pepper.
- Put the chicken thighs back to the skillet and spoon the sauce over.
- Prepare the oven and preheat to about 200 degrees C or 400 degrees F.
- Remove the skillet from the heat and place it inside the preheated oven. Roast the chicken thighs for about 15 minutes or until done.
- Remove from the oven and allow it to cool for a few minutes.
- Serve and enjoy!
