This very exciting dish has been my go-to for years now. It’s my family’s favourite, even my picky eaters dig this. If I am not mistaken, I have also shared this recipe with a lot of my friends, and they all love this crazy delicious pesto shrimp with mushrooms.
INGREDIENTS :
- 1 lb shrimp, peeled, deveined
- 1 tbsp olive oil
- ¼ tsp salt
- ¼ tsp red pepper flakes
- 8 oz. white mushrooms, sliced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- ½ c. chicken broth
- ½ c. basil pesto
- 1 tbsp fresh basil, chopped
- ¼ tsp salt
DIRECTIONS :
Step 1: Add the olive oil in a hot large skillet over medium-high heat. Add the shrimp to the skillet and sprinkle with 1/4 tsp each salt and red pepper flakes. Cook the shrimp for about 3 minutes, turning halfway until the shrimp turned pink and cooked through. Set the shrimp aside when done.
Step 2: In the same skillet, drizzle another tbsp of olive oil. Add the sliced mushrooms and minced garlic, then sprinkle with 1/4 tsp salt. Cook for about 1 to 2 minutes, stirring the mushrooms until the mushrooms release their liquid, reduce in volume, and are soft.
Step 3: Return the cooked shrimp to the skillet. Add half cup of basil pesto and half cup chicken broth. Stir well and warm over medium heat.
Step 4: Take the skillet off the heat and serve the shrimp garnished with some chopped fresh basil. Enjoy!
