I have tried different meatloaf recipes, and I loved them all. Although, this Pioneer Woman meatloaf stands out because of its simplicity. This juicy and flavour-packed meatloaf is best paired with mashed potatoes and green beans for the perfect weeknight meal!
INGREDIENTS :
Meatloaf:
- 4 whole Eggs, Beaten
- 2 lbs Ground Beef, 80% lean
- 12 slices Thin cut Bacon
- 1/4 tsp Seasoned Salt
- 3/4 tsp Salt
- Freshly Ground Black Pepper
- 1/3 c. fresh Parsley, minced
- 1 c. Parmesan Cheese, freshly grated
- 1 c. Whole Milk
- 6 slices White Bread
Sauce:
- 1/3 c. Brown Sugar
- 1+1/2 c. Ketchup
- 1 dash Tabasco sauce
- 1 tsp Dry Mustard
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: To a large bowl, add the bread and pour the milk over. Allow the slice of bread to soak for about 5 minutes. Then, add the rest of the meatloaf ingredients and mix using your hands. Remember not to over mix or the beef will be tougher and lose some of its flavours.
Step 3: Shape the meat into about 5 inches wide loaf. Put the loaf on a broiler pan to let the grease drain. For easy clean-up, line the bottom of the broiler pan with foil.
Step 4: On top of the loaf, line the bacon, tucking the ends under the bottom.
Step 5: Mix the sauce ingredients (brown sugar, ketchup, Tabasco sauce, and mustard) until well combined. Over the meatloaf, brush about 1/3 of the sauce. Place the meatloaf on the middle rack of the preheated oven and bake for about 45 minutes. Brush the meatloaf with another 1/3 of the sauce and continue baking for additional 25 minutes.
Step 6: When done, remove the meatloaf from the oven and allow it to sit for about 10 minutes before slicing. The resting time lets the juices absorb back into the meat.
Step 7: Slice and serve with the remaining sauce. Enjoy with some roasted green beans and mashed potatoes.
