Summer is just around the corner, and this creamy garlic orzo is an excellent addition to your Summer’s BBQ! The best part is this is made in just a single pot using a few simple ingredients. Throw this together in a cinch and enjoy the most filling and most delicious garlic orzo you’ll ever make!
One-pan meals are super convenient with fewer dishes to clean. Pair this creamy garlic orzo with roasted veggies, tofu/vegan, or any protein you have in your kitchen for an easy and quick meal that will always leave you full and satisfied!
INGREDIENTS :
- 1/2 c. onion diced
- 3 garlic cloves minced
- 2 c. orzo
- 4 tablespoons vegan butter separated
- 3/4 c. rice milk plain, unsweetened
- 1/2 c. nutritional yeast
- 1/2 teaspoon dried parsley
- 2 teaspoon lime juice
- 3 c. vegetable stock or bouillon & water
- 1 teaspoon salt
- 1/4 teaspoon black pepper
DIRECTIONS :
Step 1: In a large skillet, melt 2 tablespoons of butter over low-medium heat. Once the butter has melted, add the onions to the skillet along with the orzo. Saute for approximately 5 minutes, stirring until the orzo is lightly browned. Make sure to keep on stirring not to burn the orzo.
Step 2: Gradually add the vegetable stock or bouillon./water to the skillet and bring to a boil. Once boiling, decrease the heat to a simmer and continue to cook for additional 13 minutes, stirring often until the orzo is completely cooked.
Step 3: Once the orzo is cooked through, add the remaining 2 tablespoons butter to the skillet along with the rice milk and nutritional yeast. Keep on stirring until boiling, then decrease the heat to a simmer. Then, whisk in the salt, pepper, parsley, and lime juice.
Step 4: Continue to cook for an additional minute or so.
Step 5: When done, serve the creamy garlic orzo warm. Enjoy!
