Meatloaf is a staple in every household. I do not know anyone who does not include meatloaf in their menu rotation. There are tons of meatloaf recipes available, and this crockpot version has been my go-to and favourite for almost a year now. It is super easy to throw together, and you just have to set the loaf to cook in your crockpot and leave. About an hour before it is almost done cooking, just grab your preferred sauce and coat the meatloaf. I love to serve this meatloaf over mashed potatoes with greens on the side for a filling meal that my family loves and enjoys always! This is a no-fail weeknight dinner that deserves recognition.
INGREDIENTS :
- 2 eggs
- 3 pounds Ground Meat Beef, Venison
- 1 Garlic Clove
- 2 c. Italian Bread Crumbs
- 2 Sweet Onions
- 1 Celery Stick
- 2 tablespoons Tomato Sauce
- 1 Green Bell Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 tablespoon Creole Seasoning
- 6 tablespoons Beef Broth
- ¼ teaspoon Black Pepper
DIRECTIONS :
Step 1: After slicing one onion, line the pieces in the bottom of a crockpot.
Step 2: In a large mixing bowl, place the ground meat and bread crumbs. Mix well until combined.
Step 3: Add the chopped onion, bell pepper, celery, and garlic to the meat and breadcrumbs. Then, add the rest of the ingredients and mix well. Make sure to knead the mixture until everything is well blended.
Step 4: Onto a chopping board, place the mixture and form it into a loaf. Pat and mould the loaf until all the cracks are gone.
Step 5: Into the crockpot place the loaf over the onions. Set to cook for 6 hours on low or 4 hours on high.
Step 6: With your preferred sauce, brush the loaf and continue to cook for an additional 40 to 60 minutes.
