These scrumptious Shrimp Scampi Roll-Ups never fail to make a statement! Fun and easy to make using only simple ingredients. A family-approved meal that is super perfect even for late-night entertaining!
INGREDIENTS :
- 3 tablespoons butter
- 4 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 1/2 cups whole milk
- 1/4 cup freshly chopped parsley, plus more for garnish
- pinch of crushed red pepper flakes
- 1/2 cup dry white wine
- 1 3/4 cup shredded mozzarella, divided
- 1/2 cup freshly grated Parmesan
- kosher salt
- Freshly ground black pepper
- 1 pound large shrimp, peeled and deveined, roughly chopped
- Juice of 1 lemon
- 10 cooked lasagna noodles
- 2 cups ricotta
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Melt the butter in a large skillet over medium heat. Add the garlic once the butter has melted. And cook for about a minute until aromatic. Stir in the flour and continue to cook for another minute until golden. Add the milk along with the parsley and a pinch of red pepper flakes. Stir and allow the mixture to thicken for 2 to 3 minutes more before adding in the wine, half cup of mozzarella, and Parmesan. To taste, season with salt and pepper. Now, add the shrimp and cook for additional 2 minutes. Finally, stir in the lemon juice.
Step 3: Lay the cooked lasagna noodles out on a large baking sheet. On top of the noodles, spread a thin layer of the sauce followed by a layer of ricotta, then a thin layer of scampi mixture. Then, roll them up.
Step 4: Over the roll-ups, spoon some more sauce and sprinkle with the rest of the 3/4 cup mozzarella.
Step 5: Place in the preheated oven and bake for about 20 minutes until golden and the cheese has melted. Set the oven to broil for about 2 minutes until the top is golden.
Step 6: Remove from the oven when done and serve the roll-ups garnished with parsley. Enjoy!
