This dish is one of my favourite Southern classics! It’s a bit unusual, but it is great! If you have not tried this Tomato Pie, you have to very soon! Every bite will get you hooked, and you’ll never settle for just a slice.
INGREDIENTS :
- 1 9” deep-dish pie shell
- 4 tomatoes, thinly sliced
- 1/2 c. chopped green onion
- 3/4 c. mayonnaise
- 2 c. grated cheese of your choice (I used mozzarella and cheddar)
- 1 teaspoon salt (for drawing out tomato juice)
- 10 fresh chopped basil leaves (about 1/4 c.)
- Fresh ground pepper and salt to taste
- 1 clove of garlic, chopped
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 375 degrees F. Place the pie shell in the preheated oven and bake for about 10 minutes. Remove the baked pie shell from the oven when done and adjust the oven temperature to 350 degrees F.
Step 2: In the meantime, place the slices of tomato on the bottom of a colander in the sink. Sprinkle the tomato slices with 1 teaspoon salt and drain for about 10 to 15 minutes. To flat paper towels, transfer the tomato slices and pat off the excess moisture.
Step 3: In the bottom of the baked pie shell, lay half of the tomato slices.
Step 4: Place the green onions, basil, garlic, salt, and pepper in a small bowl. Mix well, then sprinkle half of the mixture on the tomato slices.
Step 5: Create another layer of the tomato slices and sprinkle the remaining onion/basil mixture.
Step 6: Whisk the cheese and mayonnaise in another bowl. Spread this over the pie.
Step 7: Place in the preheated oven and bake for about 30 minutes or until lightly brown. When done, take the pie from the oven and slice. Serve warm. Enjoy!
