The first time I made this, I was having issues with leftover corn. I hate wasting food, so I always look for easy recipes to turn leftovers into new wonderful meals! I can share my favourite recipes, but today I want to put these corn and cheddar mashed potato fritters in the spotlight! I think it is time to give justice to this wonderful recipe.

I have been enjoying this recipe for years. I already shared this with many of my friends and colleagues, and they all love it! To make these fritters all you need are a few simple ingredients that you might already have in your pantry. All it takes is sixteen minutes, and you’ll have these delicious fritters on your dinner table.

INGREDIENTS :

  • 1 large egg, beaten
  • 1 c. day-old mashed potatoes
  • 1/4 c. chopped scallions
  • 1 tsp baking powder
  • 1/3 c. shredded cheddar cheese
  • 1/2 c. all-purpose flour
  • 1 c. cooked corn kernels (defrosted frozen corn or canned corn is also fine)
  • 1/4 c. canola oil for frying
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper

Step 1: In a non-stick frying pan, heat the oil over medium-high heat.

Step 2: In a bowl, place all the ingredients and mix well until blended. Into the hot oil, gradually drop rounded kitchen soup spoons. Slightly flatten the potato mixture.

Step 3: Cook the fritters for about 2 to 3 minutes on each side until golden brown.

Step 4: On paper towels or brown bags, transfer the cooked fritters to drain the oils.

Step 5: Serve the corn and cheddar mashed potato fritters right away. Enjoy!
