I am always amazed how the Chinese can pull off restaurant-quality fried rice with simple ingredients. I have tried so many fried rice recipes, but this here is my favourite. The smoky umami flavour from the light burn when you add the soy sauce is everything!

If you search the web, you’ll find different variations on how to cook fried rice. This is indeed a no-brainer dish that you can fix any time with whatever you have on hand but, not all fried rice recipes will give you the same result as this 5-minute easy egg fried rice as well as the experience of that slightly burn when adding the soy sauce (my favourite part)!

INGREDIENTS :

  • 4 eggs, beaten with a pinch of salt
  • 3 tablespoons cooking oil
  • 4 c. cold jasmine rice
  • pinch of salt
  • 4 green onions, sliced
  • 2 tablespoons soy sauce

DIRECTIONS :

Step 1: Drizzle 1 tablespoon of cooking oil in a hot wok or skillet or high heat. Swirl the wok/skillet to coat the bottom.

Step 2: Into the wok, pour the beaten eggs and scramble.

Step 3: Add the rest of the 2 tablespoons cooking oil to the wok once the eggs are cooked to about 3/4 along with the cold jasmine rice. Continue to cook, breaking the rice and stirring with the eggs.

Step 4: Around the edge of the wok, add the soy sauce. This will burn lightly for that smoky umami flavour. Adjust the salt according to taste, then stir well. If needed, adjust the heat to low.

Step 5: Now, turn the heat off, then mix in the green onions. Serve the egg-fried rice garnished with sesame seeds. Pair this with any other dishes. Enjoy!

NOTE:

If you prefer to make this egg-fried rice as a main dish, add 2 tablespoons of soy sauce.
